Our Story

The Veggie Plot is a relatively new concept to hit the marketplace in 2017 by Anna Spencer, a passionate gardener, foodie and a creative thinker, Anna developed the idea of a yogurt with a difference. On her ‘bench of contemplation’ and idea ocurred to her that yogurt could benefit from a twist and from this was borne the concept of savoury yogurts!

Whilst Vegetable Yogurt is a new specialist product, a lot of attention has been surrounding this new phenomenon. The Veggie Plot Savoury Yogurts is a Premium Product with a Greek Yogurt Base and benefits from having No Added Sugar. It comes in 150g Tubs and is versatile for Cooking or as Dips, Accompaniments and is Ready to Eat as a healthy yogurt, making it a versatile friend for the foodie.

The name ‘The Veggie Plot’ is inspired by an ambition to plot to change societies set ideas about health foods, to turn it around to make health foods fun, different, versatile.

Bolognaise with Zing
Ingredients

1 tbsp olive oil
2 medium onions, chopped
2 carrots, trimmed and chopped
2 celery sticks, finely chopped
2 garlic cloves, finely chopped
2-3 sprigs rosemary, leaves picked and finely chopped
500g beef mince
2 x 400g tins plum tomatoes
small pack basil and finely chopped
1 tsp dried oregano
2 fresh bay leaves
2 tbsp tomato purée
1 beef stock cube
100ml red wine (optional)
6 cherry tomatoes, sliced
1 tub of Veggie Plot Red Pepper with Zing Yogurt

Method

1. Put a large saucepan on a medium heat and add olive oil, then reduce the heat and add the onion, carrot, celery, garlic and rosemary, then fry for 10 mins. Stir the veg often until it softens.

2. Increase the heat to medium-high, add the mince and cook stirring for 3-4 mins until the meat is browned all over.

3. Add the tinned tomatoes, chopped basil, oregano, bay leaves, tomato purée, stock cube, chilli, wine and cherry tomatoes and Vegetable Yogurt. Stir with a wooden spoon, breaking up the plum tomatoes. 



4. Bring to the boil, reduce to a gentle simmer and cover with a lid. Cook for 1 hr 15 mins stirring occasionally, until you have a rich, thick sauce. Add the Parmesan, check the seasoning and stir.

5. When the Bolognese is nearly finished cook the spaghetti following pack instructions. Drain the spaghetti and stir into the Bolognese sauce. Serve with grated Parmesan, extra basil leaves and crusty bread.

Clams in Pepper Broth
Ingredients

1 cup (packed) fresh Italian parsley
1/2 cup olive oil
1/3 cup red wine vinegar
1/4 cup (packed) fresh cilantro
2 garlic cloves, peeled
3/4 teaspoon dried crushed red pepper
1/2 teaspoon ground cumin
1/2 teaspoon salt

Method

1. Melt butter in heavy medium skillet over low heat. Add ham and bell pepper and sauté until light brown, about 10 minutes. Add garlic and dried red pepper; stir 1 minute. Remove from heat.

2. Prepare barbecue (medium-high heat). Lightly brush baguette slices on both sides with oil. Grill bread until light brown on outside but soft on inside, about 2 minutes per side.



3. Combine clams and wine in large pot. Cover and boil over high heat until clams begin to open, about 8 minutes. Using slotted spoon, transfer clams to 6 bowls, discarding any clams that do not open. Add liquid in pot to skillet with ham-bell pepper mixture. Bring to boil over medium-high heat.

4. Add Veggie Plot Avocado and Dill Yogurt and reduce heat to medium and simmer until liquid is slightly reduced, about 3 minutes. Remove from heat. Stir in basil. Pour mixture over clams, dividing equally. Serve clams, passing grilled bread separately.

Chicken Chop Chimichurri
Ingredients

Sauce:
1 cup (packed) fresh Italian parsley
1/2 cup olive oil
1/3 cup red wine vinegar
1/4 cup (packed) fresh cilantro
2 garlic cloves, peeled
3/4 teaspoon dried crushed red pepper
1/2 teaspoon ground cumin
1/2 teaspoon salt
1 tub of Veggie Plot Mediterranean Roast Vegetable Yogurt

Chicken:
1 Whole Chicken for Roasting

Method

1.Sauce: Puree all ingredients in processor. Transfer to bowl. (Can be made 2 hours ahead. Cover and let stand at room temperature.)

2. Spread sauce over uncooked chicken and cook as per cooking instructions in oven. Baste half way through cooking.
